Homemade Two Minute Noodles
Let's be real, 2-minute noodles are amazing. They are quick, easy, cheap, and filled with MSG-tastiness. They are full of sodium and so many other things that I am quick to ignore when I am running late for work and need something to take for lunch. But the packaging, the packaging really gets to me. Each bowl of noodles has about 4 different plastic packets that can only be thrown in the rubbish. So when I saw a post on Facebook for a homemade version that is really easy to bring to work, I wasted no time in testing it out. I did not save the clip to give credit, and for that I apologise to the original poster, however, a quick Google search gives thousands of results. Apparently, the rest of the internet is way ahead of me on this.
But anyway, here are a few flavours I have tried out so far :
For each, just toss everything into a sealable glass jar and fill with boiling water when you are ready to eat. Wait two minutes to steam the veggies and cook the noodles - enjoy!
Spicy Thai Noodle
Flat rice noodles, sliced carrots, chopped broccoli, 1 finely chopped chili, 1 tsp stock powder, finely chopped clove of garlic, finely chopped centimetre piece of ginger.
Herb and Spice
Flat rice noodles, diced celery, chopped kale, sliced carrots, 1 bay leaf, 1/2 star anise, 1 tsp whole peppercorns, 1 tsp stock powder.
Flat rice noodles, kimchi, 1 tsp stock powder, finely chopped garlic and ginger.
Mushroom and Leek (pictured above)
Handful of dried mushroom, handful of sliced leek, 1 tsp vegan beef stock powder, 1 tsp soy sauce.
There is no end to the possibilities here!
